How to Change Video to ipod nano Compatibility

Hi
I'd like to recognise how best to help convert short videos taken with the Point'n'Shoot camera towards iPod Touch formatting. Can you allow?
I've only merely got my Ipod touch 2G (32GB) and I have been experimenting with this condition.
I've been playing ipod converter. It seems ok even so the main problem I've got is how to retain the original shot date from the metadata. I reckon I need this to create a Smart Playlist in addition to sort the 500 video tutorials I have into any chronological order.
Do any belonging to the converters around hold this info?
How do anyone organize your Point'n'Shoot video lessons?
